Shrimp and Pancetta

9 Nov

Shrimp and Pancetta has a light salty, smoky flavor and is a cinch to make. Taking only about 30 minutes, including prep time, this is the perfect weeknight meal.

One of the things I love most about making seafood for dinner, is how quick you can make a healthy and delicious meal for your family.  Shrimp and Pancetta takes about 30 minutes total, including the prep time, to make and put on the table.  Another thing I love about this recipe is how simple it is.  Few ingredients and a quick cooking time, make Shrimp and Pancetta a perfect weeknight meal when time is of the essence.

Everyone needs a good shrimp and pasta recipe.  Shrimp and Artichoke Pasta is the perfect weeknight dinner, you can make it real quick when time is of the essence.  You can make this dish in less than 30 minutes.  The butter-wine sauce is simple yet very flavorful, and works so well with the shrimp.  It is like having scampi mixed in with your pasta.  I like to buy marinated artichokes, and even though they are drained before adding to the butter sauce, I think the marinated herbs and oil add a nice touch to the Shrimp and Artichoke Pasta.

Bang Bang Shrimp

31 May

The first time I had Bang Bang Shrimp was at Bonefish Grill, and it was delicious. A mix of crunchy, crispy fried shrimp coated in a slightly sweet, spicy, creamy sauce, served on top of a bed of lettuce.

There is nothing better than some good shrimp.  Whether it is an appetizer, or for the main dish, shrimp are a big hit.  One of the really nice qualities of shrimp, is that they are incredibly versatile, and taste great grilled, sauteed, fried, baked, boiled, or served as a cocktail, with a squeeze of lemon.  Even if your not a big shrimp fan, I think this Bang Bang Shrimp recipe might just change your mind.  It is awesome and needs to be shared with all.

Folly Beach Garlic Shrimp

This Folly Beach Garlic Shrimp is designed to be made for a crowd who enjoys seafood, and its great as an appetizer or as the main dish.

This Folly Beach Garlic Shrimp is designed to be made for a crowd who enjoys seafood, and its great as an appetizer or as the main dish.  You could even make some angel hair pasta or linguine and toss the Folly Beach Garlic Shrimp with it for a nice pasta dish.  Personally, I feel you don’t even really need to measure the ingredients.  I just add as much or as little as I want of each ingredient, so don’t be afraid to play around until you find that perfect combination for your palette.  Also, I do not use very many bread crumbs, instead, just more of a dusting as compared to what is in the actual recipe.

Folly beach is located on the historic Folly Island in Charleston SC.  This low-country location is famous for its shrimp and its surfing.

Chicken Paella Recipe

26 Jul

Chicken Paella is a Spanish dish that is full or flavor, and made easy by using a rotisserie chicken.

Chicken Paella is one of those great all-in-one dishes.  The traditional version of this Spanish dish can take awhile to make, but The Hungry Wife Chicken Paella recipe cuts down on time by using a store bought rotisserie chicken.  I love finding recipes that use a rotisserie chicken, they are perfect for weeknight meals, or when you are cooking for a crowd.  If you wish, you may add in shrimp and/or mussels toward the end of cooking for a true Spanish flare.

Lowcountry Boil is a classic summertime meal, that is delicious and easy to prepare for a crowd.  It is perfect for beach parties or backyard bar-b-que’s.  This Lowcountry Boil recipe is one of my favorites for a few reasons.  It is super easy to make, adding in one ingredient at a time and letting cook a few minutes before adding the next.  It cooks up quick and makes little mess for so much food, making it perfect for large servings.  Also, you can play around with the ingredients a little bit.  If you would like to add some crab legs (or whole crab), you would add them in with the shrimp or instead of the shrimp.  You can also add in some large cuts of carrots or other veggies as you wish.

Cantonese Steamed Chicken is something I came up with by combining a couple different recipes. The steaming process leaves the chicken so moist and juicy, and the flavors meld together very well.

Steak and Vegetable Kabobs

14 Jun

The marinade I use for this Steak and Vegetable Kabob recipe is wonderful and full of flavor. It has a nice touch of citrus, and tastes great as a dressing for a salad too.

Kabobs make outdoor entertaining festive and fun. They can be easily assembled ahead of time, grilled to perfection in minutes and there’s little clean up after the meal. They’re perfect for backyard picnics and parties.  Who doesn’t love a kabob?  You can put anything you want on a kabob, and these are no exception.  The traditional meat for kabobs is lamb, but you can also use: beef, goat, chicken, fish, seafood (shrimp, scallops), vegetable or tofu.
