French Dip Sandwiches are a favorite of mine.  I used to only eat them when out at restaurants, not having a good recipe to make them myself.  This is about as simple as it gets.  Even though the cooking time is long, your not really doing much, but letting the slow cooker do its job.  The great thing about making this roast beef in your slow cooker, is that unlike roasting beef in the oven, you don’t have to worry about the meat drying out.  The final product is a super moist, tender and flavorful beef.

Beef Shepherd’s Pie is a traditional, all-in-one comfort dish.  Shepherd’s Pie is full of flavor, and with the veggies mixed in with the beef filling, it is the perfect way to sneak in veggies to picky eaters.  The creamy mashed potatoes on top are one of my favorite parts of this dish.  To help make the preparation easier, you can purchase frozen potatoes that are ment for mashing.  Simply cook in microwave and you are ready to mash away.  Much faster then peeling, cubing, and boiling your own potatoes.

Homemade Meatballs are easy to make and taste out of this world.  They can easily be adjusted to meet the needs of a gluten-free diet, and taste just as great.

Everyone should have an amazing recipe for homemade meatballs, and these will not let you down.  Meatballs are simple to make, and it seems that everyone you talk to has a super secret meatball recipe.  Now you can have one too.  Something that I think is important to remember when making your own homemade meatballs, is to keep it simple and use fresh, quality ingredients.  Personally, that is what I think makes the best meatballs.  The recipe calls for using 80% lean ground beef.  Using a slightly higher fat lean ground beef adds additional flavor, and helps hold the everything together, keeping the shape perfectly.

Recently, my husband has been asking me to make some pulled pork.  The first thing that popped into my head, was that I get to use my slow cooker again!  I love cooking with the slow cooker for so many reasons, but mainly because it’s easy and everything comes out tasting amazing.  This is a recipe for North Carolina Pulled Pork, which has a vinegar based sauce.  If you are not a fan of this type of sauce, feel free to use your own favorite.

When I was growing up, my mother used to make a London Broil similar to this, but she called it Family Steak.  Filipino-Style London Broil is very similar to my mothers recipe, but taken up a notch.  The soy sauce is what really makes this dish, adding that yummy salty flavor.  I am totally in love with the citrus flavor that the lemons provide.  It really helps cut through the salt and makes the steak refreshing to eat.

One thing I love about Fajitas are their simplicity.  All you need to make a wonderful meal is a good piece of steak, peppers and onions, tortillas, some cheese, and if desired lettuce, sour cream and a touch of salsa.

Grilled Fajitas are one of my husbands favorite things to eat.  They are easy to make and taste amazing, perfect for a family of four or two.  Don’t let the Barbecue in the title throw you off, it is not talking about the saucy, messy barbecue.  Using the barbecue spice rub on the sirloin and grilling it adds a delicious subtle flavor that totally enhances the Fajitas.

The marinade I use for this Steak and Vegetable Kabob recipe is wonderful and full of flavor.  It has a nice touch of citrus, and tastes great as a dressing for a salad too.

Kabobs make outdoor entertaining festive and fun. They can be easily assembled ahead of time, grilled to perfection in minutes and there’s little clean up after the meal. They’re perfect for backyard picnics and parties.  Who doesn’t love a kabob?  You can put anything you want on a kabob, and these are no exception.  The traditional meat for kabobs is lamb, but you can also use: beef, goat, chicken, fish, seafood (shrimp, scallops), vegetable or tofu.
